Breaded Ranch Chicken

So I wanted to share one of my most favorite recipes.

Ingredients:
3/4 c. cornflakes, crushed
3/4 c. Parmesan cheese, grated
1 envelope ranch salad dressing mix
8 chicken breast halves, boneless and skinless [(2 lbs.)(I like to butterfly the chicken.)]
1/2 c. butter or margarine, melted

Directions:  In a shallow bowl, combine the cornflakes, Parmesan cheese and salad dressing mix.  Dip chicken in butter, then roll in cornflake mixture to coat.  Place in a greased 13x9x2 baking dish.  Bake, uncovered, at 350 degrees for 45 min. or until chicken juices run clear.  If you would like to make a healthier version you could dip the chicken in egg whites or olive oil.

I am grateful for the days I have motivation and get things done.

That looks so yummy! I have never made this, but I know the family would love it! Can I borrow some of your motivation?
